Can the unit be used as a proofer?

Yes, the thermostat has a range of 90°-200°F (32°-93°C). Proofing is typically done in the 90°-95°F (32°-35°C) range.

Can you get a heavy duty transport package?

Yes, the Transport Package includes: Stand-off handles, full perimeter bumpers, transport locking latch, and heavy-duty 5" x 2" casters.

Transport package that inclues flush mount handles and corner bumpers, bracket for holding cording during transport, stainless steel door and stainless steel dutch doors.

What relative humidity can be achieved in this unit?

At 160°F. (71°C) for the air element and maximum humidity setting we will attain up to 70% relative humidity. This will obviously be affected by how many times you go in and out of the unit.
